Scott Hanselman's Computer Zen - Migrating a Family to Google Apps from Gmail, Thunderbird, Outlook and others: The Definitive Guide
You'll need to change DNS records to use Google's servers for your email, and then it should be as easy as using Google's panel to add email addresses.
